Crafted from ripe strawberries and a blend of three sugars — white, cane, and muscovado — it combines natural fruit brightness with a deep caramel undertone. Honey smooths the edges, while a splash of lemon brings lively freshness. Vanilla and star anise weave in soft spice and warmth, giving the liqueur both charm and depth. Its name, “Scarlet Kiss,” reflects not only the vibrant red hue but also the tender, memorable experience it offers — like a fleeting moment of passion preserved in a bottle, elegant and irresistible.

Testing Notes

During the development of Scarlet Kiss, we noted that the balance of sugars was crucial for achieving the desired sweetness without overpowering the fruit's natural flavor. The infusion time proved essential; four weeks allowed the vodka to fully extract the aromatic qualities of the spices and fruit, resulting in a well-rounded liqueur.

Scarlet Kiss Liqueur FAQ

Strawberry top notes are delicate and fade with light, warmth, and long contact with pulp and strong spices. Oxidation also dulls the fresh aroma, making the flavor feel more like jam than fresh fruit. Heavy sweetness can further mute the nose.

To keep it bright, strain on time, store in a cool dark place, and minimize headspace in the bottle. Avoid shaking once it is strained, because re-suspending fine particles can make it taste heavier and duller. If you need more strawberry lift, use aroma techniques like brief fresh fruit contact rather than longer spice contact.

Resting is still useful, but it should be clean resting in a sealed bottle after straining. If it feels flat, a small dilution and a short chill often brings back perceived freshness more effectively than adding more sugar or more lemon.

Strawberry is perfume-forward but fragile. White sugar keeps sweetness clean, cane sugar adds warm lift, muscovado adds deep caramel, and honey adds silky body. When the total sweetness is too high, strawberry stops smelling fresh and starts tasting like cooked jam or candy.

Build sweetness in steps and always taste chilled. Cold tasting shows whether strawberry still pops on the nose. If it is turning jammy or heavy, stop sweetening and try a small dilution first; lowering density often brings aroma back faster than adding more citrus.

After you reach a good balance, give it a resting period so the sugars integrate and the vanilla smooths the edges. If the finish still feels heavy, a tiny extra dilution is usually cleaner than pushing acidity or adding more muscovado.

Strawberry can be easily overshadowed by warm aromatics. Star anise is especially dominant and can quickly turn the profile into licorice candy. Vanilla is gentler, but too much can push the drink into generic dessert sweetness.

Remove star anise as soon as licorice is clearly noticeable on the nose while still in the background. If it becomes obvious in taste, it is already close to taking over. Vanilla can stay longer for roundness, but pull it if strawberry aroma starts fading into creamy sweetness.

If anise or vanilla has already dulled the fruit, strain immediately and let it rest. A small dilution often helps strawberry aroma rise again, while extra lemon juice can make it sharper without restoring the nose.
