The Story

Amla Feni Ras was imagined as a meeting of two Indian worlds—the forest-bright tang of amla and the coastal soul of Goan feni. The idea was simple: capture the warmth of homemade amla candy and blend it with a spirit that carries history in every drop. As the candy melts into the feni, gentle spices rise—cinnamon, cardamom, clove, and a hint of star anise—shaping a soft, earthy sweetness. Lime zest adds a quiet spark, lifting the mix without disturbing its calm character. The result is a soothing, natural fusion—familiar, rooted, and quietly enchanting.

Straining through fine cloth ensured a smooth finish, enhancing the overall drinking experience.

Amla Feni Ras Liqueur FAQ

Amla has a bright, tart character that can be buried by “mulled” spice too easily. Cinnamon can become woody, clove can go medicinal, star anise can dominate with licorice, and cardamom can become minty if over-extracted. The goal is clean tart fruit with a light warm shimmer.

Remove clove first as soon as you smell warm clove oil. Remove star anise when licorice is clearly present but still background. Remove cardamom once it reads citrusy-floral, before it turns cooling. Cinnamon can stay to give body, but pull it at soft warmth, before barkiness.

If it drifts into mulled territory, strain and rest. A small dilution can also help bring brightness back and reduce the impression of heavy spice without increasing sweetness.

Fresh amla brings sharp acidity and astringency with a clean, herbal fruit note. Candied amla brings sweetness, softer acidity, and often a more “confection” style flavor. Using only one changes both the acid load and the final texture.

If you use only fresh amla, expect a brighter, more challenging sour profile and you may need more sweetening and longer rest time. If you use only candied amla, reduce added sugars because the candy contributes sweetness; otherwise it can become cloying and mask feni.

In both cases, taste chilled and adjust slowly. Amla benefits from time, and it’s easy to over-correct sweetness early. Let it settle, then fine-tune to a lively, balanced tang.

Amla is famously tart and astringent, and adding lime can make it even sharper. Sweeteners need to do two jobs: soften the acid bite and keep the flavor bright, not flat. If the syrup is too dense, acidity can feel like sticky sourness; if too light, it becomes mouth-puckering.

Taste chilled and correct in order. If it’s too sharp, try a small dilution first—this reduces acid concentration and often makes sweetness feel more effective. Then sweeten in small steps. Keep lime as lift; don’t keep adding juice to chase aroma.

Resting is essential for amla. The initial “shock” of sourness usually calms down with time, especially as spice integrates. Wait before making big changes, then adjust gently to land on a vivid, jewel-like tang.
